Smashed Hot Sweet Potatoes

There are two types of people in this world.

People that actually try out recipes that they pin on Pinterest...and those who don't.

I was totally in the latter category for a while and then I decided I couldn't be that person anymore. I needed to make some changes in my life, starting with cooking things I pin. (Being a little over dramatic here, I know.)

These Smashed Hot Sweet Potatoes were one of the first things I tried and they were a hit! Super easy, flavorful and a nice change from sweet potato fries. Not that I really needed a change from sweet potato fries, those are my fav.

Crispy, sweet and spicy outside, soft, fluffy inside. A match made in heaven...or in your own kitchen!

Crash Hot Sweet Potatoes
Prep Time: 30 min. Total Time: 1 hour
Recipe from The Creekside Cook (lots of great recipes!)
 
Ingredients:
1 & ½ tablespoons light brown sugar
½ teaspoon kosher salt
½ teaspoon ground cumin
½ teaspoon New Mexico chili powder
½ teaspoon smoked sweet paprika
¼ teaspoon onion powder
¼ teaspoon chipotle chili powder
⅛ teaspoon granulated garlic
10 coarse grinds of black pepper
2 medium to large sweet potatoes
2 tablespoons melted butter
2 tablespoons olive oil
 
Directions:
  1. Set a large pan of water with a teaspoon of kosher salt over medium heat until simmers.
  2. Cover a large baking sheet with foil.
  3. In a small bowl, mix together all of the dry spices, and set aside
  4. Peel the sweet potatoes, and cut into 1 & ½ inch thick slices.
  5. When the water is simmering, add the potato slices and cook for around 10 minutes, until the slices are getting a little soft. (Make sure they are soft enough to mash!)
  6. Remove the slices to a cooling rack. You can leave them on the rack until they cool off and the outsides are dry, or if you are in a hurry, blot all of the moisture from the surface of the slices. This is important – they have to be dry on the outside or they won’t get crispy.
  7. Start the oven preheating to 400ยบ
  8. Lay the slices of sweet potato on the prepared pan, and use a water glass to gently compress each slice – you want them to flatten out and the edges should get kind of ruffly.
  9. Mix the butter and oil together.
  10. Using a pastry brush or the back of a spoon, spread a thin layer of the oil and butter mixture on each slice.
  11. Sprinkle some of the spice mixture over each slice, and press onto the surface lightly so that it sticks to the potato slices.
  12. Gently turn oven each slice, and repeat the oil/butter and dry spice application as you did on the first side.
  13. Roast in the oven for about 15 minutes, until the bottom of the slices is getting caramelized and crispy.
  14. Carefully flip over each slice and roast another 10 minutes or so, until both sides are crispy and the spice mixture has melted together and turned all nicely brown.
  15. Serve!

Thanksgiving Tablecloth

Because of Charlotte's sweet (and recent) birth, we are celebrating Thanksgiving at our house this year!

I wanted to think of a fun idea that we could use every year whether we are with my immediate family, my in-laws family, at our house or somewhere else. Pinterest saves the day again.

I bought a white tablecloth from Walmart and fabric markers from good ol' Hobby Lobby (although, Walmart might have them, too!) and during our meal on Thursday, we will all write the year and what we are thankful for that year.
 
I am really excited to see how this progresses year to year as our family grows and I think it is a fun way to unite both sides of the family at the holiday season by reading through all of the previous years thankful wishes!
 
It's easy to store, easy to travel with and full of memories and thankfulness. Sounds like the perfect Thanksgiving addition, to me!

Subway Art

The hubster and I recently (and finally!) finished decorating our entry way (well, almost finished).

Some call it nesting. I'll take it, whatever the motivation was!

I originally wanted a large sunburst mirror but also realized that we had a lot of fun pictures from our travels and around Colorado that we didn't have a space for in our house. I like the idea of a gallery wall but I don't like the commitment (that's a LOT of holes in the wall) and the tedious job of measuring where they should all go, etc.

I was inspired by this picture from Pinterest and went to town! Well, Ikea actually. I went to Ikea. Which is basically like its own town.

Ikea has these great shelves that I hung for books in Charlotte's room. They come in black, tan or white and would be super easy to paint if you were wanting another color. They also come in the length we used in the entry way, 45 1/4" or, what we used in Charlotte's room, 21 3/4".
 
They are so easy to install and only cost $9.99 each! Deal!
RIBBA Picture ledge IKEA The picture ledge makes it easy to vary your favorite motifs as often as you like.
 
I also loaded up on Ikea frames while I was there and I think the most expensive one was $4.99. I only prefer the finer things in life, obviously.
 
So this is turning into a much longer story than I first anticipated.
 
I knew that besides pictures of our great friends, families and travels, I wanted to do a seasonal subway art 8x10, as well. I found this jackpot of a link on Pinterest to FREE Subway Art printables! I simply followed their great instructions and uploaded the months that I wanted to Picasa and ordered them from the Walgreens down the street. One hour later and my frame was all ready for Halloween! And Thanksgiving! And Christmas! You get the idea. I didn't print them all but instead printed a few holiday pieces and a neutral, year-round print for the other months.
 


 
I am so excited about this and that it is DONE! Well, we still have a few empty frames but we also have a baby on the way who I am sure will have a few pictures taken of her. Just a few. I stored the rest of the prints in the frame, behind the current month. How simple is that?

Cleaning Time

Maybe it's nesting or maybe I just need a schedule to keep me from getting stressed out but I am loving all these cleaning tips and ideas. Now I just have to incorporate them and not just blog about them...oh, life.

Keep this in your shower filled with half vinegar, half dish washing soap. Clean while you are showering and it will always be sparkly! Genius!

Peach Cake Bars

This recipe has been hailed as the "best" recipe on Pinterest.

And I wasn't just going to let that title go by without sampling!


Boy, oh, boy- it is good!

I made a few adaptations using fresh peaches but overall, left this recipe as is because it is delicious! Light, fresh and refreshing! Perfect to use up those scrumptious peaches that are in season right now but the base recipe would be great to throw in apples or berries, too.

Peach Cake Bars
Adapted slightly from Just a Pinch
Yield: 12 large bars
Prep Time: 15 min. Total Time: 1 hour (includes both cooking times)

Ingredients:
-1 box yellow cake mix
-2 eggs
-1/3 c. butter, room temperature
-8 oz. cream cheese, room temperature
-1/3 c. sugar
-1 tsp. vanilla extract
-Scant 4 cups of fresh peaches, peeled and sliced into 1/4 in. slices (I used 4 large peaches)

Directions:
-Preheat oven to 350 degrees and spray a 9x13 pan with nonstick spray.

-Combine cake mix, 1 egg and butter in a medium bowl with fork until crumbly. Reserve 1 c. for topping and press the rest into the prepared pan. Bake for 10 minutes.

-Sprinkle the peaches on top of the partially baked crust.

-With an electric mixer until creamy, combine cream cheese, sugar, 1 egg and vanilla extract. Pour and spread over peaches.

-Top with remaining 1 c. reserved crumbs and bake for 30 minutes.

-Let cool completely before cutting. Store in refrigerator...if you have any left to store!

Baby Girl Decor

For the past few months, I've had this gut instinct that we were having a baby girl.

So, we picked out a name, bedding and nursery decor for a...BOY.

I don't know why or how but boys seem much easier to plan for and so I am now 5 months along and back to square one on the planning. We got the name figured out (Charlotte Elizabeth) and I'm stalking obsessing over casually perusing Pinterest and Etsy for little girl nursery ideas.

Gallery walls intimidate me because I see these amazing photos of them in rooms but I feel like when I see them in person or try to do them myself, they turn out a little dull. Nonetheless, I found some adorable options if I do decide to tackle a gallery wall in Charlotte's room.

Comprehension Pinwheel

I love switching things up in the classroom to keep myself growing as a teacher and to keep the kids engaged. I saw this on Pinterest and thought it would be such a fun, new way to assess comprehension after read-alouds.

Does everyone else love the Target dollar section as much as I do? I found these cute little pinwheels there last week and knew I had to give this a whirl (pun obviously intended)!


I decided not to write the questions directly on the pinwheel for two reasons.
1. The polka dots could intrude on the words.
2. I like the idea of being able to take off the questions and switch it up for different books, purposes and differentiation throughout the year.
I don't want to commit too much here, you know.


We decided whichever question lands at the top by his eyes is the one we will answer. I love having the kids blow at the pinwheel or spin it and get excited about answering the questions!

I love thinking of other ways to incorporate this pinwheel idea....
-Math facts
-Spelling word review (read it then use it in a sentence)
-Shapes
-Blend/Chunks (have them name a word that contains that blend/chunk)
-Money (after two spins, add up the amount you have together)

Teachers, any other cute ideas to share about how to spice things up in the classroom based on this pinwheel idea?
